diginfo – movie.diginfo.tv Traditional Japanese sweets such as Daifuku and Shiratama usually require steaming to create their moist chewy texture, but Gunmaseifun Flour Milling Company has developed Hakuzuki, a revolutionary rice flour that can be used to make these sweets by merely mixing the rice flour with water and kneading it, without having to steam it. One kilogram of Hakuzuki rice flour can make 130 pieces of mochi that weigh 20 grams each, and the price of each piece is one third that of existing products. The amount of water that is required can also be adjusted to achieve a variety of chewy and moist mochi textures. As Hakuzuki uses no wheat products, it can also be eaten by people with gluten allergies.
